The definition has changed quite a lot with time. With the appearance of modern food technology, you can now have a wide variety of tasty and healthy vegan food options. Chefs and food enthusiasts are now trying out different plant-based foods to create dishes that resemble the exact same taste and texture of meat. So, if you are thinking about starting your vegan diet journey, this is the right time to start. You don’t have to deal with boring foods on a daily basis.   1. Stuffed Bell Peppers

If you are craving some tasty snack type of side dishes, stuffed bell peppers can be a great choice. Check how to make them easily at home.

  • Ingredients 

 Bell Peppers (cut them in round halves and remove the seeds), Pea protein powder, Black Beans (Drain them and rinse properly), Tomatoes (chopped or diced as per preference), Chopped Cilantro, Corn Kennels, Green Chillis (chopped) and Shredded Cheese.  

  • Preparation

Start with pre-heating your oven to 190 degrees Celsius and gather all the ingredients. Take a mixing bowl and put pea protein powder, a little bit of salt and a little hot water. Make sure the mixture is not very runny or not very tight. Add the black beans, diced tomatoes, chopped green chilli, chopped cilantro, and corn kennels. Mix them well for a while. Now, take the halved Bell Peppers and stuff the pea protein mixture inside them. Put the stuffed Bell Peppers on a baking plate. Don’t forget to cover the plate with a foil. Now bake the stuffed Bell Peppers for 20-30 minutes. Take out the plate, sprinkle some shredded cheese and bake for another 5 minutes. Your stuffed Bell Peppers are now ready to serve. Enjoy them with your main course as a side or have them with your tea as snacks. 

  1. Mashed Potatoes with Roasted Garlic 

Here is your regular favourite dish with a new twist. 

  • Ingredients 

Potatoes (medium-sized, peeled and diced), Garlic Cloves (peeled and cleaned), Vegan Butter or Vegetable Oil, Almond Milk, Olive Oil, Salt and Pepper powder for taste. 

  • Preparation 

Preheat your oven to 200 degrees Celsius first. Take a baking sheet and place the diced potatoes and peeled garlic cloves. Brush them with a little bit of olive oil. Sprinkle salt and pepper powder as per your taste. Put them in the oven to roast for 25-30 minutes. Check the potatoes to make sure they are tender. Now take a mixing bowl and put the roasted potatoes and garlic. Add vegan butter and Almond milk and mash them together. When the mixture is smooth add some salt and pepper powder. Place it on a plate and serve hot with rice.
